1) Jambalaya – Easy ingredients and easy prep have made this a staple in my house! Put all the ingredients in a freezer bag and it will be ready to cook right out of the freezer! More info here!

What you’ll need:

  • 1 pound andouille sausage, sliced
  • 2 tablespoons canola oil
  • 2 cups diced sweet onion
  • 1 cup diced celery
  • 1 large red bell pepper, diced
  • 4 garlic cloves, minced
  • 1 bay leaf
  • 2 teaspoons Creole seasoning
  • 1 teaspoon dried thyme
  • 1 teaspoon dried oregano
  • 2 (10-oz.) cans diced tomatoes and green chiles, drained
  • 3 cups chicken broth
  • 2 cups uncooked long-grain rice
  • 2 cups shredded cooked chicken
  • 1 pound peeled, medium-size raw shrimp, deveined
  • 1/2 cup chopped fresh flat-leaf parsley
  • Garnish: chopped green onions

2) Chicken Parmesan Meatball Casserole – This simple chicken Parmesan casserole has all the flavors of you love without the mess! A tasty and easy treat! More info here.

What you’ll need:
For the meatballs:

  • 1 pound lean ground chicken
  • 1 cup panko bread crumbs
  • 1 egg
  • 1/2 cup grated Parmesan cheese
  • 1/4 cup milk
  • For the casserole:
  • 1 pound campanelle pasta (any small shape is fine, such as ziti)
  • 1 jar (24 ounces) marinara sauce
  • 2 cups grated mozzarella cheese
  • 1 teaspoon Italian seasoning

  • 4 cups flour
  • 1½ tsp salt
  • 1½ tbsp yeast
  • 3 tbsp olive oil
  • 1½ cups warm water
  • 2½ cups of chopped meat (ham or pepperoni)
  • 1½ cups mozzarella cheese
  • 1½ cups cheddar cheese
  • pizza sauce (for pizza hot pockets)

What You’ll Need:

  • 5 cups chicken broth, preferably homemade
  • 1 cup onion, pureed or finely chopped
  • 3 cups finely chopped fresh broccoli
  • 1 cup chopped fresh broccoli, medium sized for texture
  • 1 cup grated carrots
  • 3 large cloves garlic
  • 1 bay leaf
  • ¼ cup butter
  • ¼ cup flour
  • 1 cup half and half (I used fat free)
  • Dash of garlic salt
  • 1 cup shredded Gouda cheese (I used apple smoked)
  • ½ cup shredded sharp cheddar cheese
  • Salt and pepper to taste

5) Tex Mex Chicken Casserole – This easy recipe makes four freezer meals! Enjoy this easy casserole recipe with your family! Reheats for easy leftovers! More info here!

What You’ll Need:

  • 4 chicken breasts, cooked and shredded
  • 8 cups of cooked rice
  • 2 can of Rotel tomatoes
  • 2 packs of taco seasoning
  • 2 cans of whole kernel corn, drained
  • 2 cans of black beans (undrained)
  • 1 small can of black olives, drained
  • 6 cups of cheddar cheese, grated
