1) Jambalaya – Easy ingredients and easy prep have made this a staple in my house! Put all the ingredients in a freezer bag and it will be ready to cook right out of the freezer! More info here.

What you’ll need:
1 pound andouille sausage, sliced
2 tablespoons canola oil
2 cups diced sweet onion
1 cup diced celery
1 large red bell pepper, diced
4 garlic cloves, minced
1 bay leaf
2 teaspoons Creole seasoning
1 teaspoon dried thyme
1 teaspoon dried oregano
2 (10-oz.) cans diced tomatoes and green chiles, drained
3 cups chicken broth
2 cups uncooked long-grain rice
2 cups shredded cooked chicken
1 pound peeled, medium-size raw shrimp, deveined
1/2 cup chopped fresh flat-leaf parsley
Garnish: chopped green onions

2) Chicken Parmesan Meatball Casserole – This simple chicken Parmesan casserole has all the flavors of you love without the mess! A tasty and easy treat! More info here.

For the meatballs:
1 pound lean ground chicken
1 cup panko bread crumbs
1 egg

1. Pre-Heat your over to 450 degrees F.
2. On foil lined baking sheet layer in the chips, monterey jack and cheddar cheese, and shredded chicken.
3. Bake for 3-5 minutes or until Cheese is melted.
4. Top with baberque sauce and scallions.
